Apple & Mango Jelly Recipe
Not all sweet treats are a no-no for diabetics! In fact, it’s possible to make your own jelly from any 100% fruit juice that preferably contains no additives. And while we have used clear honey as a sweetener for our recipe, you can even use Stevia or Splenda, depending on your own needs and tastes. Each serving contains no more than 59 calories, making this an excellent dessert option for diabetics, as well as those looking to lose weight.

  • 1 tbsp Raw Honey
  • 3 tsp Powdered Gelatin
  • 1 large Mango Ripe, peeled and chopped into small pieces
  • 300 g Raspberries or Blueberries

Instructions
  1. Fill a loaf tin with cold water and set aside.
  2. Pour apple juice into a saucepan and add the honey. Place over low heat and sprinkle in the gelatin. Bring to boil, whisking constantly, then remove and leave to cool for at least 5 minutes.
  3. Drain the loaf tin and place a layer of mango and blueberries at the base. Pour in enough of the cooled apple jelly to cover the fruit. Leave in the refrigerator until set. Repeat the layers until all the fruit and jelly has been used.
  4. Leave to set in the refrigerator for 2 hours. Then cover with a cling film sheet and weight down with some clean cans. Leave to chill like this overnight.
  5. Before serving, tip the base into boiling water for 30 seconds. Invert over a serving platter and carefully remove from the loaf tin. Serve, divided equally between 8 plates.
