  • 4 Ripe Pears but firm
  • 2 tbsp Lemon Juice Fresh
  • 1 tbsp Manuka Honey
  • 2 Star Anise Whole
  • 1 Cinnamon stick Bruised
  • 1 Stalk Lemongrass Bruised
  • 1 Cm Fresh root Ginger Peeled and sliced
  • 2 Cloves Whole
  • 2 Bay Leaves Fresh
  • 300 ml Water

Instructions
  1. Using a vegetable peeler, peel the skin off the pears as thinly as possible and leave the stalk intact. If necessary, cut off a thin slice from the base of each pear so that it will stand upright. Place in a large bowl and pour over the lemon juice with enough water to cover the pears.
  2. Pour honey in to a large saucepan with a lid. Add the star anise, cinnamon stick, lemongrass, ginger, cloves, bay leaves and water. Bring to boil, then reduce the heat and simmer, stirring occasionally for 5 minutes or until the honey is completely dissolved.
  3. Drain the pears and put into the saucepan. Bring to boiling point and then reduce the heat to a gentle simmer. Cover with the lid.
  4. Cook for 15 to 20 minutes, or until the pears are tender. Remove the pan from heat and allow the pears to cool in the syrup.
  5. When cool, remove the pears from the pan with a slotted spoon and place in a serving dish.
  6. Return the syrup to heat and bring to a boil. Boil for 5 to 8 minutes, or until the syrup is thickened and reduced by half. Leave the syrup to cool for 10 minutes, then pour over the pears and serve.
