Berry Yogurt Cups Recipe
With just 63 calories per cup, this simple dessert is great for your waistline while being totally delicious!! The low-fat natural yogurt is sweetened with nothing more than high-in-antioxidants fresh berries, making it perfect for diabetics as well.

Ingredients
  • 450ml Low-Fat Natural Yogurt
  • 1 ½ tbsp Orange RindFinely grated
  • 225g Mixed Berrieslike strawberries, blueberries, raspberries, cranberries. Plus few extra to decorate
  • Mint SprigsFresh to decorate
Instructions
  1. Set the freezer to rapid freeze at least 2 hours before freezing this dish.
  2. Mix the yogurt and orange rind together in a large bowl.
  3. Cut all large strawberries into bite-size pieces.
  4. Mix the fruit into the yogurt and combine well together.
  5. Spoon into 4 ramekins. Freeze for 2 hours, or until completely frozen.
  6. Decorate with extra chopped berries and mint sprigs and serve. Remember to return your freezer to its original setting afterwards, though!
