Coconut Curry Soup
Coconut milk lends a delicious, creamy texture and flavor to this soup. The fat in the coconut milk slows down the rate at which sugar is absorbed by your body, especially useful in people with diabetes. Ginger infuses a distinct taste to this soup while also helping control blood sugar levels.
