  • 1 tsp olive oil
  • 1 small Onion Cut into small wedges
  • 2 Cloves garlic Minced
  • 2 Eggs
  • 2 Egg Whites Only
  • 85 g Courgette Trimmed and grated
  • 100 g Carrot Medium, Peeled and Grated
  • Dash Salt & Pepper
  • 1 tbsp Basil Fresh for Garnish

Instructions
  1. Heat the oil in a large non-stick frying pan. Add the onions and garlic and sauté for 2 minutes, stirring frequently.
  2. Beat the whole eggs and egg whites together in a bowl, and then pour into the pan. Use a spatula to pull the egg mixture from the sides in the pan into the center. Cook on low heat for another 5 minutes or so.
  3. Once the base is set, add the grated courgette and carrots with the tomatoes. Sprinkle with salt and pepper and continue to cook over low heat until the eggs are set to personal preference.
  4. Sprinkle with the shredded basil. Cut the frittata into quarters and serve.
