Courgette, Carrot & Tomato Frittata Recipe
Breakfast is a great opportunity to get some fiber, which is good for diabetes as it fills you up without raising blood sugar levels. Try this simple frittata recipe with added veggies — courgette, carrots and tomatoes to keep your energy levels up all day!

Ingredients
  • 1tsp olive oil
  • 1small OnionCut into small wedges
  • 2Cloves garlicMinced
  • 2 Eggs
  • 2 Egg WhitesOnly
  • 85g CourgetteTrimmed and grated
  • 100g CarrotMedium, Peeled and Grated
  • Dash Salt & Pepper
  • 1tbsp BasilFresh for Garnish
Instructions
  1. Heat the oil in a large non-stick frying pan. Add the onions and garlic and sauté for 2 minutes, stirring frequently.
  2. Beat the whole eggs and egg whites together in a bowl, and then pour into the pan. Use a spatula to pull the egg mixture from the sides in the pan into the center. Cook on low heat for another 5 minutes or so.
  3. Once the base is set, add the grated courgette and carrots with the tomatoes. Sprinkle with salt and pepper and continue to cook over low heat until the eggs are set to personal preference.
  4. Sprinkle with the shredded basil. Cut the frittata into quarters and serve.
