  • 8 Crisp Breads
  • 4tsp Cream CheeseLow-fat Herb Flavored
  • 55g Rocket Leaves
  • 1/2 Small MelonChopped
  • 4 Cherry TomatoesHalved (optional)
  • 150g Lean Boiled HamFinely sliced
  • 8 Raspberries
  • 8slices Cucumber
  • 1/4small AppleThinly Sliced
  • Pepperto taste
  1. Spread the crispbreads with the low fat cream cheese and top of with roughly torn rocket leaves.
  2. Cut melon into wedges. Arrange on top of rocket leaves.
  3. Top it up with ham slices.
  4. Arrange raspberry, cucumber and apple on top.
  5. Sprinkle with pepper and serve.

My friend Dee showed me how to make it years ago, and it couldn’t be easier to prepare. It’s just a mixture of chopped tomatoes, balsamic, basil, and garlic, spooned over olive-oil brushed slices of toasted baguette or rustic bread.

It’s perfect for a party because you can make a large batch of the topping ahead of time, as well as toasting baguette slices. Either bring out a bowl of the bruschetta topping for people to put on their own toasts, or do it for them right before serving.
