Ingredients
  • 4 Nectarinesyou can use peaches if you can’t find nectarines but firm
  • 140g Fresh Blueberries
  • 115g Fresh Raspberries
  • 150ml Freshly squeezed Orange Juice
  • 1tsp Manuka Honey
  • 1tbsp Brandy (optional)
  • 200ml Low-fat Greek Yogurt
  • 1tbsp Orange RindFinely grated
Instructions
  1. Preheat the oven to 180C/350F. Cut the nectarines in half, remove the stones, and then place in a shallow ovenproof dish.
  2. Mix the blueberries and raspberries together in a bowl. Use this mix to fill the hollows left by the nectarine stones. Spoon extra berries around the dish.
  3. Mix together the orange juice, honey and brandy if using, in a small bowl and pour over the fruit.
  4. Blend the yogurt with the grated orange rind in another bowl and leave to chill in the refrigerator until required.
  5. Bake the berry filled nectarines for 10 minutes, or until the fruit is hot.
  6. Serve with the chilled orange flavored yogurt spooned over the warm nectarines.
