Instructions
  1. Preheat grill to medium-high
  2. Sprinkle salt and pepper on the eggplant slices and let them sit in a plate for about 10-15 minutes.
  3. Combine the vegan or eggless mayonnaise and basil in a small bowl.
  4. Use a pastry brush to paint both sides of the eggplant slices with olive oil, and grill them on each side until nicely browned.
  5. To assemble the sandwich, cut the bread lengthwise. Spread the basil mayonnaise generously on both sides.
  6. Layer about 3 to 4 rounds of grilled eggplant on each sandwich, and then layer sliced tomatoes and onions over that. Add the Mozzarella cheese shavings generously, and close the sandwich.
  7. Lightly toast the sandwiches for about 30 seconds in the hot grill so that the bread toasts and the cheese melts. Serve hot.
