It’s a great source of protein, low in calories, while also being chalk full of important vitamins and minerals.

  • 2 Salmon fillets
  • 2 Cloves garlic Minced
  • 1 tbsp Extra Virgin Olive Oil
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Dried Basil
  • 1 tbsp Lime Juice
  • 1 tbsp Parsley Fresh and Finely Chopped
  • Mixed Salad Greens to serve

Instructions
  1. Mix together the garlic, olive oil, basil, salt, pepper, lemon juice, and parsley in a small bowl.
  2. Place the salmon filets in a glass dish or a re-sealable plastic bag. Pour the marinade over the fish. Massage the marinade into the fillets so the flavors can easily permeate into the meat. Cover or seal and place in the refrigerator for 1 hour.
  3. Preheat the grill to medium-high.
  4. Remove fish filets from marinade and drain off the excess. Grill filets 5 minutes per side or until fish is done (you will know when it starts to easily flake with a fork).
  5. Serve on a bed of mixed salad greens.
