  • 16 large Shrimps Raw
  • 1 Clove garlic Minced
  • 1/2 tsp Pepper
  • 1 Lime Juice
  • 2 Juice from Clementine Oranges
  • Dash of Hot Sauce
  • Cooking Spray
For The Salad
  • 2 Clementine Oranges Peeled, de-seeded and sectioned
  • 3 Cups Mixed Spring Salad Greens
  • 1 Juice of Clementine Orange
  • 1 tbsp Extra Virgin Olive Oil

Instructions
  1. In a bowl, whisk together the orange juice, garlic, pepper, lime juice and hot sauce. Dip the shrimp into this marinade and refrigerate for half an hour, so it can absorb all the citrusy flavors.
  2. In the meantime, set up the grill. Spray the grill rack with cooking spray.
  3. After half an hour, remove the shrimps from the marinade and grill them for about 2 to 3 minutes on each side, or until the meat is well-cooked.
  4. Whisk together the clementine juice with extra-virgin olive oil to make a salad dressing.
  5. Plate the shrimp on a bed of mix salad with clementine orange chunks, and drizzle the dressing over. Serve immediately.
