  • 4 sprays olive oil
  • 2 Cloves garlic
  • 2 Shallots
  • 25 g Whole-meal Breadcrumbs Fresh
  • Handful Basil Spigs Fresh
  • 25 g Dried Apricots Chopped
  • 1 tbsp pine kernels
  • 55 g Vegan Cheese Try brands like Daiya or Field Roast – Chao Slices

Instructions
  1. Preheat the oven to 350 deg F. Remove the stalks from the mushrooms and set aside. Spray the bases of the mushrooms with the oil, and place underside up in a roasting tin.
  2. Put the mushroom stalks in a food processor with the garlic, shallots and breadcrumbs. Reserve a few basil sprigs for garnish and put the remainder into the food processor, along with the apricots, pine kernels and vegan cheese.
  3. Process for 1-2 minutes or until a stuffing consistency is formed. Season with pepper, mix, and divide equally amongst the 4 mushroom caps.
  4. Bake for 8 to 10 minutes or until the mushrooms are tender and the stuffing is crisp on the top.
  5. Serve hot, garnished with the reserved basil sprigs.
