Instructions
  1. Preheat oven to 325-degree F and line a large baking sheet with parchment paper.
  2. Grind the nuts in a food processor or high-powered blender until they resemble coarse meal. Add oil and continue to process until mixture becomes smooth and achieves the consistency of butter.
  3. Transfer to a bowl and add erythritol, shredded coconut or almond meal (whichever you are using), egg, vanilla extract and salt.
  4. Mix well until dough comes together. Stir in chocolate chips.
  5. Shape the dough into 1 inch balls and then flatten with the palm of your hand to about 1/4 inch thick.
  6. Bake 10 to 12 minutes in the preheated oven, until just golden brown around the edges and beginning to set on top.
  7. Remove and let cool completely before serving.
