Mexican Chicken Burritos Recipe
A Mexican classic, this Chicken Burrito is a really tasty way of adding more lean protein to your diet. We have skipped the white rice to give unnecessary carbs a miss, and instead added some extra veggies.

  • 4 Whole wheat Tortillas
  • 1 OnionFinely Chopped
  • 2 Chicken BreastsSliced thinly
  • 2small Ripe tomatoesFinely Chopped
  • 2 Spring OnionsFinely Chopped
  • 1Cup LettuceShredded
  • 1 Lime
  • 1tbsp olive oil
  • 1tbsp Taco Seasoning
  • 1Tub Tomato Salsato serve
  • Vegetable Oil Spray
  1. Preheat the oven to 300 deg F. Wrap the tortillas in an aluminium foil and cook in the oven for 10 minutes, or until soft
  2. In the meanwhile, heat the oil a non-stick pan and add the onions. Sauté for about a minute, and add the thinly sliced chicken pieces.
  3. Cook the chicken for about 5-8 minutes, until its tender. Add the taco seasoning, squeeze in the lime, and turn off the heat.
  4. Turn the oven to 350 deg F.
  5. Prepare the tortillas by putting 1/4th of the chicken mixture in the centre of each tortilla. Top up with the finely chopped tomatoes, lettuce and spring onions. Fold the tortillas into wraps and line onto a lightly sprayed baking tray.
  6. Cook in the oven for about 10-15 minutes.
  7. Spoon over the salsa on the burritos before serving. Eat hot!
