Love deli meats? Then this Mexican Egg Scramble is just what you need for a lavish Sunday morning breakfast! Bacon, mushrooms, and red pepper bring excitement to this not-so-humble scrambled eggs recipe. What makes Mexican Egg Scramble a delicious yet healthy breakfast choice? The fats in bacon are about 50% monounsaturated and a large part of those is oleic acid – the same fatty acid that olive oil is praised for and generally considered “heart-healthy”. As long as you can get your hands on the least-processed bacon and eat it moderately, it should not adversely affect your GERD symptoms. If you can, buy bacon from local farmers that used traditional processing methods. The best bacon is from pasture-raised pigs that ate a diet that is appropriate for pigs, not a high-grain diet only. Instructions
  1. Cook bacon till crisp in non-stick skillet. Drain and cut bacon into 1/2" slices.
  2. Pour off grease and return 1 tablespoon bacon grease back into pan and sauté the mushrooms and peppers about 5 minutes, or until veggies are crisp tender.
  3. Break in the eggs and stir to scramble them. Cook until the eggs start to set.
  4. Stir in cheese and cook until the eggs are set. They shouldn’t be runny or too dry.
  5. Turn off the heat. Put the crisp bacon back into the pan and fold.
  6. Serve on individual plates
