  • 85 gm Mushroom Of your choice
  • 1 Tomato
  • Fresh Basil sprigs or salad leave To Garnish

Instructions
  1. Preheat the oven to 375 deg F.
  2. Place the turkey breasts between two sheets of baking paper and pound lightly with a meat mallet or rolling pin. The aim is to get the meat 5mm or 1/4th inch thick. Take care not to tear the flesh. Once done, cover and set aside.
  3. Put the spring onions, garlic, mushroom and tomatoes in the food processor and process for a minute, or until you get a chunky paste. Add salt and pepper to taste. Mix well.
  4. Divide the stuffing into 4 portions and use to spread over the flattened turkey breasts.
  5. Roll up the turkey breasts to encase the stuffing and secure with either string or wooden cocktail sticks.
  6. Cut out four 15cm/6inch squares of baking paper and wrap each stuffed turkey breast in a square of paper.
  7. Place the parcels in a roasting tin and bake for about 20 to 25 minutes, or until the turkey is cooked.
  8. Remove the baking paper, and serve hot, garnished with basil sprigs or salad leaves.
