Perfect Poached Eggs with Baby Spinach Recipe

Ingredients
  • 4Jumbo Eggs
  • Pinch Kosher Salt
  • 3tsp Apple Cider Vinegar (ACV)
  • Bunch Baby Spinach
  • 2Slices Whole Grain BreadToasted (optional)
Instructions
  1. In a 12 inch skillet, pour in enough water to come up to 1 inch deep.
  2. Add 1 teaspoon kosher salt and 3 teaspoons of apple cider vinegar. Bring to a simmer over medium heat.
  3. Meanwhile, crack 4 very cold jumbo eggs into 4 ramekins or custard dishes.
  4. Carefully pour the eggs one at a time into the simmering water.
  5. Turn off the heat and cover the pan, and set a timer for 5 minutes.
  6. When the timer goes off, carefully remove the egg with a slotted spoon.
  7. Serve your poached eggs on a bed of baby spinach immediately. Scoop up the perfectly runny yolk with hot toasted bread, if desired.
