  • 40 g Castor Sugar
For the Ruby Fruits
  • 225 g Fresh Strawberries
  • 2 tbsp Clear Honey
  • 200 ml Water
  • 350 g Mixed fruits Raspberries, Strawberries, Blackcurrants and stoned Cherries
  • Few fresh sprigs of Mint

Instructions
  1. Preheat the oven to 140C/250F.
  2. Whisk the egg white in a grease-free bowl until stiff, then gradually add the sugar a spoonful at a time, whisking well after each addition. When all the sugar has been added and the mixture is stiff, spoon into a piping bag fitted with a large star nozzle and pipe small whirls on to a lined baking sheet. Alternatively, shape the mounds with 2 teaspoons. s.
  3. Bake in the oven for 1 hour, or until crisp. Leave to cool before removing from the baking sheet. Store in an airtight tin.
  4. Place the strawberries in a saucepan with the honey and water. Bring to boil then reduce the heat to a simmer and cook for 5-8 minutes, or until the strawberries have collapsed. Leave to cool for 5 minutes.
  5. Transfer the strawberries to a food processor and process to form a puree.
  6. Press the puree through a fine sieve, adding a little extra water if the puree is too thick.
  7. Prepare the fresh fruits and stir in the fruit puree. Stir until lightly coated.
  8. Serve in 4 cups, topped with the baby meringue
