  • 1/2 Cup Boneless Chicken Cut into 1/2 inch chunks
  • 1 tbsp 2% Milk
  • 1 tbsp Cheddar Cheese Shredded
  • 1 tsp olive oil

  • 1 small Spring Onion Finely chopped, for garnish

Instructions
  1. To cut down on cooking time, you may pre-cook the chicken chunks using the microwave. Put the chicken in a microwave safe bowl, add ½ cup water, season with salt and pepper, and cook in the microwave on high heat for about 2-3 minutes. Remove and drain the chicken.
  2. Heat the olive oil in a pan. Add the chicken chunks. Cook them for about 2 minutes.
  3. In the meantime, break the eggs in a bowl, carefully removing the yolk. Add the milk, salt and pepper. Whisk well.
  4. Pour the egg mixture in the pan and scramble it with a spatula. Stir around till the eggs look cooked.
  5. Eat hot with whole-wheat toast.
