  • 1 1/2 Cup Whole Wheat Spagetti Pasta
  • 1 tbsp Extra Virgin Olive Oil
  • 2 Cloves garlic Peeled and finely chopped
  • 1-2 Dried Red Chillies Crumbled
  • 1 Cup Raw Prawns Peeled
  • 1/2 Cup White Wine
  • 1 Large Tomato Peeled, blanched and pureed
  • 1 Lemon Zest & Juice
  • 1 Cup Fresh Parsley Roughly Chopped
  • 1 tbsp Shaved Parmesan Optional
  • Salt and Pepper to taste

Instructions
  1. Cook your spaghetti in a large pan of salted boiling water according to the packet instructions.
  2. Meanwhile, heat the extra virgin olive oil in a large frying pan and toss in the garlic and chili. As the garlic starts to brown, add the prawns and sauté them for a minute.
  3. Add the white wine and the tomato purée and simmer for a couple of minutes.
  4. When the pasta is ready, drain it in a colander, reserving a little of the cooking water.
  5. Toss the spaghetti with the sauce, squeeze in the lemon juice, and add the chopped parsley.
  6. If the pasta looks too dry, add a little of the reserved cooking water if you want to loosen the sauce a bit.
  7. Season with salt and pepper, as desired.
  8. Plate the pasta and sprinkle with the grated lemon zest and parmesan. Mix well. Enjoy your pasta hot!
