Spaghetti with Prawns Recipe
Just because you’re diabetic doesn’t mean you have to completely give up on pasta! Try this recipe with whole-wheat spaghetti that includes appetite-squashing fiber, antioxidants, vitamin E &B, protein and healthy fats which come from the bran and germ. Paired with prawns which are low in saturated fat and calories but a good source of protein, this recipe makes for a lavish, highly satiating dinner.

  • 1 1/2Cup Whole Wheat Spagetti Pasta
  • 1tbsp Extra Virgin Olive Oil
  • 2Cloves garlicPeeled and finely chopped
  • 1-2 Dried Red ChilliesCrumbled
  • 1Cup Raw PrawnsPeeled
  • 1/2Cup White Wine
  • 1Large TomatoPeeled, blanched and pureed
  • 1 Lemon Zest & Juice
  • 1Cup Fresh ParsleyRoughly Chopped
  • 1tbsp Shaved ParmesanOptional
  • Salt and Pepperto taste
  1. Cook your spaghetti in a large pan of salted boiling water according to the packet instructions.
  2. Meanwhile, heat the extra virgin olive oil in a large frying pan and toss in the garlic and chili. As the garlic starts to brown, add the prawns and sauté them for a minute.
  3. Add the white wine and the tomato purée and simmer for a couple of minutes.
  4. When the pasta is ready, drain it in a colander, reserving a little of the cooking water.
  5. Toss the spaghetti with the sauce, squeeze in the lemon juice, and add the chopped parsley.
  6. If the pasta looks too dry, add a little of the reserved cooking water if you want to loosen the sauce a bit.
  7. Season with salt and pepper, as desired.
  8. Plate the pasta and sprinkle with the grated lemon zest and parmesan. Mix well. Enjoy your pasta hot!
