Ingredients
  • 4 Tilapia Filets
  • 2tbsp Pineapple Juice
  • 1tbsp Fresh gingerGrated
  • 1tbsp Honey
  • 1/4tsp Pepper
  • 2tbsp olive oil
  • 1tbsp Coconut oil
  • 1/4Cup Pineapple Chunks
  • 1 Spring OnionChopped
  • 1Small English CucumberFinely Chopped
  • 1Cup Long-grain Brown RiceCooked according to directions
Instructions
  1. Cook the rice as per packet directions.
  2. In a large bowl, combine the pineapple juice, ginger, spring onions, honey, olive oil, pepper and toss with chopped pineapple and cucumber.
  3. Heat the coconut oil in a large skillet over medium heat. Lightly sprinkle the tilapia fillets with pepper and sauté for 1 to 3 minutes per side, until golden brown and cooked throughout.
  4. Plate the fish and serve with the cucumber salsa and rice.
